Mom's Nut Balls - a.k.a "Italian Wedding Cookies"
 Source: Although traditionally these cookies are called Italian Wedding Cookies, I can remember my Mom making them almost every Christmas as plain "Nut Balls".  These buttery cookies with ground pecans are one my favorites and takes me back to my childhood.  I always enjoyed helping mom make them, even if my fingers got a little toasty rolling the hot cookies in the confection's sugar after they came out of the oven.  It seemed there was never enough to last the season.  Mom recalled getting her recipe from Nanna Vi.
Makes about 2 dozen

INGRED:



1/2 cup butter (1 stick)

3 tablespoons of confection's sugar

1 teaspoon vanilla extract

1 cup flour

1 cup pecans (chopped fine)

 

[extra sifted confection's sugar for coating]

 
RECIPE:

Cream butter and sugar well.  Add flour, vanilla and nuts.  Mix well and roll out into small balls, about 1-in dia. with the palms of hands.

Bake in an un-greased pan at 300-degrees F for about 30 to 40 minutes.  Roll in confection's sugar soon after removing from oven, then cool.  Roll again in the confection's sugar.

 Before serving lightly sprinkle more confection's sugar, if desired.
